Milk plays an important part of our daily lives since we are young. We know that milk is good for everyone for its calcium benefits. Since the two older children of mine have slowly weaned off from their milk powder, they have started to consume fresh milk more frequently. Thanks to Greenfields, they sent us a range of their milk products for us to try.

Personally I am not a Cantonese but I find this Cantonese dessert so easy to do without going through any steaming or baking process. If you love tao huay (soya beancurd), you might like this too if you are fine with the ginger taste. Come to think of it, it will be a nice dessert for ladies who are doing confinement or people who loves ginger.
~Ginger Milk Pudding 薑汁撞奶~
It's a very simple recipe which consists of:
250ml fresh milk
4 tsp fresh ginger juice
2 tsp of sugar (optional)
*the ingredients stated above can produce 2 bowls of ginger milk pudding
Method:
1) I use old gingers because the starchy content in the ginger juice aids in solidifies the milk. I will pour the required amount into the number of bowls I'm going to prepare. Let the juice rest for a while and starchy material will settle to the bottom of the bowl.
2) The trick lies with the temperature of the milk. Make sure the milk is heated up till 80 degrees Celsius.
3) This is the crucial part! When the milk is ready, I will quickly stir the ginger juice before pouring the milk into the bowl. Once the milk is in the bowl, do not stir and let it rest for 5-10 minutes. The magic will happen & you will have a nice bowl of ginger milk pudding for dessert.
4) If you prefer the sweeter version, you can either add the sugar while cooking the milk or just drizzle a bit of sugar syrup on top of the pudding before serving.
On normal work days when I want to have a healthy smoothie drink, I will use Greenfield's High Calcium Skimmed Milk which only contains 0.1% fat of fresh milk, or High Calcium Low Fat version with only 1.3% fat! And blend the milk together with plain yogurt and fruits.
On hot days, I love to drink cold fresh milk top with Milo powder.
